I use matzo farfel to make Passover granola, which is covered with melted chocolate and then formed into bite-sized pieces.  These are addictively delicious!

Ingredients

  • 3 cups granola* (recipe follows)
  • 12 ounces bittersweet chocolate, melted
  • ¼ cup grated coconut

Place 3 cups granola in large mixing bowl.  Pour in melted chocolate and mix until granola is well coated with chocolate. Drop by teaspoonfuls onto cookie sheet covered with wax paper. Sprinkle with grated coconut.

Refrigerate until set.

*Granola Ingredients

  • 2 ½ cups matzah farfel
  • 1 cup shredded coconut
  • 1 cup sliced almonds
  • ¼ cup margarine
  • ¼ cup brown sugar
  • ¼ cup honey
  • ½ teaspoon salt

Preheat oven to 325.

Combine first three ingredients in a bowl then place on cookie sheet. Bake for 15 to 20 minutes.  Toss mixture every few minutes and check to make sure sides are not burning.

Remove when lightly toasted.  Increase oven to 350.

While first three ingredients are in oven, combine margarine, brown sugar, honey, and salt in a saucepan. Bring to a boil, then reduce heat and simmer for 3 minutes, stirring.  Remove from heat.

Place toasted farfel, coconut, and nuts in a large mixing bowl.  Pour on syrup mixture, and mix well all ingredients.  Make sure everything is evenly coated.

Place granola on cookie sheet and toast for 20 to 25 minutes, until golden brown.

Check frequently and toss to prevent sticking and burning.

Cool thoroughly.

Makes 3 to 4 dozen granola crunchies

Notes

Delicious, addictive!  Can add some spices like cinnamon, some flavorings like vanilla.  Can also use different nuts and add some dried fruits.
